MUTTON BIRIYANI
Ingredients;
Cashew- 10,15
Raisins - 10
Onion - 4
For masala ;
Ghee- 100gm
Tomato- 2
Ginger - 2tbs
Garlic- 2tbs
Greenchilly-2tbs
Mutton- 1kg
Black pepper -1/2 tsp
Salt -to taste
Chilly powder-2tbs
Garam masala-1tbs
Turmeric powder1/2tsp
Lemon juice
Curd
coriander& mint leaves
For rice :
Jeerakasala rice- 3 glass
Ghee-4 tsp
Cinnamon- 4
Cardamom-5
Cloves-5
Bayleaves -2
Onion- 1 big
Ginger -1tsp
Preparation;
Rice.
Heat 4 tsp ghee in a pan . Add whole spices. Saute well. Then add onion and ginger. Saute till onion get brown colour.
Add soaked riced to it..saute for 2 minutes. add 6 glass water and salt. Cook till the water absorbed. ..
Masala;
Heat 100gm ghee and fry Cahew, raisins and onion..keep aside. Add tomato into balance ghee ..after cook add ginger garlic greenchilly. Saute well..add mutton to it..add salt and pepper. . After 5 minutes add add all powders, lemon juice and curd..cook well by closing the lid..atlast add 1/2 fried onion to it. Cook till the gravy gets thick.
Dhum procedure:
Layer mutton in a large pan.
Add 1/3 portion of rice evently spread over the masala..sprinkle cashew, raisins, coriander & mint leaves, fried onion, ghee , little garam masala.. repeat using balance rice and other ingredients. . Cook this on low flame for 10-15 minutes.
